I created a peppermint mocha recipe this morning. Actually, I’ll acknowledge that this isn’t a true mocha in that I didn’t add espresso. I didn’t need that much of a pick-me-up so I left it out. If you’re super tired, throw a shot in there.
I’m not a huge fan of the broken candy pieces at the bottom of my mug, so I splurged with real peppermint extract. No aftertaste, no gummy and syrupy last swig. I used barely any and will have the small container for approximately 5.4 more years.
What I did:
I melted about 15 chocolate chips in my mug and added about three drops (be careful not to pour!) into the mixture and stirred. I added warm milk, hot coffee, whipped cream, and a bit more chocolate. I used about half a peppermint candy for a little burst. It melted before I finished the drink.
The peppermint extract gave the mocha a strong taste that wasn’t laced with sugar. By the time I added the whipped cream and the chocolate syrup, it was the mocha balance of real chocolate and sweet I wanted.
